In 2022, Vineland published a report on fruit and vegetable by-product streams available in Canada for repurposing within the food industry. This webinar presentation discusses the large volumes of material available, locations of availability and quality of the material. Further, considerations for accessing and using the material and potential functionality of components within these by-product streams, including some findings from Vineland’s in-house research, are also be presented.
